Einkorn dates back to early times, believed to be the original ancient grain grown in the lands now known as Iraq. When compared with the modern, highly modified wheat of today, einkorn’s unhybridized genetics and low gluten levels make it compatible with the human body and easier to digest.
Nutrients are also more abundant in einkorn grain than in modern wheat. Einkorn offers:

Why Choose Young Living Einkorn Flour
I heard Gary Young speak about einkorn flour at the 2015 Young Living Convention this summer in Dallas, Texas, and what he had to say really started me thinking more about this ancient grain. Not only does Young Living grow their own einkorn, but they also harvest it by hand. They gather the einkorn into shocks and allow it to sit outside for several days, during which time it gathers dew and rain, then dries out in the sun, which allows it to begin to germinate (similar to when we soak our grains). This increases the digestibility of the grain. I loved learning about this and that Young Living practices this, as I love to soak all our grains at home. Thanks Young Living for doing this step for me!
How to Bake with Einkorn Flour
When you purchase einkorn flour from Young Living, it will come with a small recipe book that includes things like muffins, tortillas, artisan einkorn bread, spiced applesauce bread, homemade egg noodles, luscious lemon bars, cut out cookies, Grandma’s festive thumbprint cookies, and Texas sheet cake (some of these recipes are found on the box of flour itself). These recipes are a good place to start, as einkorn does behave somewhat differently than modern wheat flour.
For us, as we’re newly introducing gluten again, I am making sourdough bread to start out. So I will be following the tips included in the einkorn cookbook for working with einkorn flour.
Einkorn flour is easy to use and can be substituted in a 1:1 ratio with all-purpose or whole-wheat flours. However, Einkorn Flour does take some getting used to. Use the following guidelines for the best results in your standard recipes:
For baking bread, consider the following:
I have my sourdough starter bubbling in the kitchen right now and I’m all ready to make my first batch of einkorn sourdough bread! I don’t know who is more excited, the boys or me ;) (OK – that’s a silly question; I’m ten thousand times more excited than them!)
